Actually G.T.A. 5 has had several updates.

The updates usually include many new vehicles and stability issues.
You realise though that nosTEAM does not have anything to do with the game design and mechanics.
They only provide you a means of playing the game for free or where Steam is not allowed.
The nosTEAM updates include the patch but also setup for use of non-Steam launch and different save locations. Basically their entire game sits in one directory while the saves and profiles sit in the My Games folder found deep in the User folder of My Documents.
Installing one of their patches to another version of game other the one listed above their patch will usually render that game not launch able or crashes.
The original package was a very large torrent download of over 55GB as well as several files to tinker with and settings to get it working.
I believe nosTEAM basically repacked this once open package to their standard multi-file download making it easier for everyone to download and install the game. Then a simple nosTEAM patcher that fixes the game so it will execute properly and find its files/save/profiles.
